More Raw Food in April

Here’s some things I’ve been eating lately on my 100% Raw Food vegan diet:

Today
Breakfast: big Gala Apple
Lunch: Big salad with lettuce, carrots, broccoli sprouts, sunflower sprouts, avocado, carrots, raw croutons made of various seeds (store bought), and a raw Herb Vinaigrette dressing made with extra virgin olive oil, apple cider vinegar, fresh organic basil, parsley, rosemary, garlic, sea salt and black pepper. (raw dressing was bought at Whole Foods)

Some other things I ate lately in April include the following:

Red Cabbage and Romaine Salad topped with sunflower seed croutons and a tomato basil vinagrette dressing.

Raw Pizza topped with spinach

Raw Pizza topped with sprouts, and a mexican fruit salad.

Zucchini Spaghetti with walnut “meat”

Zucchini Fettucini Alfredo with pine nut “parmesan” and a salad.

Mock egg salad, carrot salad and cucumber salad.

Bunny wrappit (raw vegan wrap with carrots, avocado, tomato, nut “cheese”, sprouts and wrapped in lettuce)

raw Key Lime Pie

raw Chocolate; raw banana ball/nut dessert; raw lemon & fig dessert.

Flaxseed crackers spiced with tomatoes and bell peppers

Various fruit: Strawberries, pineapple, plums, oranges, apples, kiwi, bananas.

Pina Colada fruit smoothies

Raw buffet at Hippocrates

I visited and enjoyed a raw food buffet at Hippocrates health institute, the world renowned place where people go to get cured of any illness through a raw food diet. Here’s a photo of what I ate at their raw buffet:

Kale salad with beets (I don’t usually like beets but it was good in that), also a cauliflower and dill mixture (tasted like fluffy rice but better), also bean sprouts, sunflower sprouts, pea sprouts, cucumbers, carrots, onions, and a delicious salad dressing. I think it was a tahini and thyme dressing but it tasted light and tropical. Overall very good. I’ll have to try to recreate that cauliflower and dill mixture since it was delicious.

Raw Food in March

Here’s some more raw food that I ate in March on my raw vegan diet.

This is the raw Zucchini Pasta with Spinach Basil Pesto that I made for a potluck at work. They loved it and ate it all up. This dish is fun, fast and easy to make. I just used a vegetable spiral slicer to slice up the zucchini into noodle shapes. Then bought a jar of raw organic spinach basil pesto from Whole Foods’ raw food section (near the produce) and added it to the pasta and then sprinkled on nutritional yeast. This dish has lots of nutrients. Also garnished it with some fresh parsley from my spice garden.


Fruit Kabobs: honeydew, kiwi, grapes and starfruit.

Below is Spinach salad with strawberries. And Raw spaghetti.

My two recent attempts at making raw pizza. Left photo is pine nut ‘cheese’ pizza with cherry tomatoes and italian spices. Right photo is alfredo pizza with zesty marinara pizza sauce, cherry tomatoes, red bell pepper and sprouts.

Left photo shows Zucchini hummus pizza with cucumber salad and quinoa tabbouleh. Right photo shows regular raw pizza, vegan Ceasar salad and a yummy raw vegan chocolate cookie.

Baja burritos with walnut pate filling, avocado and a mexican fruit salad containing pineapple, mango, pear and a little red bell pepper.

I also had some delicious raw strawberry chocolate cake (not pictured).


More raw food

Here’s more photos of what I’ve been eating on my 100% raw food vegan diet. A few dishes I ate at the end of february.


Thai spring rolls wrapped in collard greens with red peppers, carrots and a nut sauce. Also zucchini (looks like pasta when sliced) with a nutty sweet sauce and some mung bean sprouts. Very delicious.

 
Also had a big salad at a salad bar on another day. (right photo) It had spinach, romaine lettuce, carrots, cucumbers, yellow squash, onions, sunflower seeds, daikon radish, jicama, cauliflower, cabbage and the dressing was some oil and vinegar. very good, nutritious and filling.

As you might know from my recent post on raw foods, I’m now eating a 100% vegan raw food diet. Here’s some Vegan Raw Food dishes I ate over the past week:


Raw Spaghetti (uses zucchini)


Raw Canneloni with salad


Mock Salmon Salad with lettuce


Raw Soft Taco with spanish rice, cherry tomatoes and guacamole
(also had some black-eyed peas)


Raw Romaine Salad with carrots, almonds and herb vinagrette dressing.


Raw Fettucini Alfredo (uses zucchini for noodles)

Raw Vegan Caesar Salad with croutons


and organic Fruit and salad.


I tried starfruit too which reminded me of a mild orange.
Overall all the food was great and I ordered some raw food “cook” books so I can eat more raw dishes full of enzymes and other nutrients. I also ordered a vegetable spiral slicer so zucchini can be sliced into yummy noodles. Much healthier.
