Here’s what I ate on my vegan diet on 7/2/09:
Lunch: Salad (spinach, chickpeas, etc.)
Dinner: I tried a new sandwich patty. I had an organic Falafel patty (organic raw ground sunflower seeds, brown rice, chick peas, split peas, tahini, sesame seed paste, parsley, cumin powder, garlic and sea salt) by sunshine burgers and put it on a whole wheat bagel with ketchup. This had alot of protein in it and tasted very good. I think I’ll try their garden burger version next time.
Snacks: organic kiwi fruit and grapes. Kiwi fruit is much easier to eat when you use a fruit peeler. I got a new peeler that looks like a very wide carrot peeler. Kiwi is a good source of Dietary Fiber, Vitamin E, Potassium, Copper, Omega 3’s, Vitamin C and Vitamin K.
