My diet 06-30-09

What do vegans eat if they don’t animal products? Nutrient rich food. Here’s what I ate on 6/30/09:

Lunch: Steamed greens (kale and mustard greens), Potatoes seasoned with thyme, and sauteed Vegetables (cabbage, carrots, cauliflower and squash). And 1 bottle of mint green tea (w/100% Vitamin C). As shown in photo below.


Dinner: Chickpeas, spinach, romaine lettuce and steamed veggies (carrots, green beans, yellow squash.). And I went to my first raw food class at Whole foods market. There I had some raw jicama potato salad (jicama, yellow pepper, celery, rosemary, avocado with a dressing that had tahini, parsley, lemon juice, etc.) and I had some raw Strawberry Tart. The tart was delicious and dairy free.


Snacks: A Peach mango jello cup (natural, fat-free, vegan without gelatin. Has 250% vitamin C and tastes great). A little of chocolate flavored coconut milk ice cream.
